1. Mango Kheer

With the richness of vermicelli and the sweetness & tanginess of mango pulp, this recipe is a unique treat to the tastebuds. Here is how to make the rich, creamy and smooth mango kheer!

Ingredients:

  • 5 tbsps of mango pulp
  • ½ cup vermicelli (sevaiyan)
  • ½ tbsp ghee
  • 5 tbsp sugar
  • 3 cups of full-fat milk
  • ½ cup of water
  • 4 tbsp chopped mangoes for garnish

Cooking Instructions:

  • Start by putting ghee on a broad non-stick pan.
  • After the ghee melts, add the vermicelli and cook it for 2 minutes on a low flame until it turns golden brown, after which keep it aside.
  • Combine the 3 cups of milk and ½ cup of water in a deep non-stick pan, mix it until well combined and cook on medium flame for 6 minutes, stirring every now and then.
  • Now add the sugar to the milk and cook for 10 minutes while stirring from time to time.
  • Put the roasted vermicelli, and keep cooking on a medium flame for 10 minutes while again stirring occasionally.
  • Remove it from the stove, cool it completely and then add the mango pulp and mix it until well combined.
  • Refrigerate it for one hour or more.
  • Finally, garnish it with the chopped mangoes and serve chilled

2. Mango Shake

A quick beverage to make for a hot summer afternoon to get you refreshed like nothing else!
It’s delicious and so easy, you’ll want to make it every chance you get and is also perfect for on-the go. All you need is mango pulp, milk, sugar and ice cubes!

Ingredients:

  • 1 Cup Mango Pulp
  • 1 cup chilled milk
  • ½ cup of water
  • 4 tsp powdered sugar

Instructions:

  • Start by blending the mango pulp completely in the blender
  • Now add on the other ingredients and blend once again
  • Remove from the blender, pour into a tall glass or a glass of your choice and enjoy!

3. Aam Shrikhand

Shrikhand, a traditional maharashtrian sweet with a twist of mango delight. You and your loved one are bound to enjoy this fruity dessert!

Ingredients:

  • 1 cup mango pulp (aamras)
  • 1 cup hung curd
  • ½ cup icing sugar or powdered sugar
  • 1 pinch of cinnamon powder
  • ¼ cup almond slices

Instructions:

  • Start by making hung curd, by tying some yoghurt in a muslin cloth and leave it hanging for 3 to 4 hours until all the water drains out. After this, apply pressure to the cloth such as to squeeze out all the water, your hung curd is ready.
  • Once the hung curd is ready, pour it in a bowl, mix it well for 5 minutes, then add the icing sugar, again beat for minutes and lastly add mango pulp
  • Mix well and sprinkle some cinnamon powder. Your mango shrikhand is ready to eat!

4. Mango Chutney

A unique combination of sweet, sour and spicy mango chutney for your taste buds. Yes, you can make savoury with mango pulp too! You are sure to be delighted with this recipe as it’s one from the Masterchef India Season 4 finalist Karishma Sakhrani!

Ingredients:

  • 1 cup mango pulp
  • 3 tsp white vinegar
  • 1 small white onion
  • 2 pcs star anise
  • 2 tbsp sugar
  • 2 green chillies, finely chopped
  • 1 tbsp mint (pudina), finely chopped
  • 1 lemon, juiced
  • Salt, to taste

Cooking Instructions:

  • Add mango pulp and all the ingredients except mint, and cook on a medium flame
  • Stir occasionally and cook for about 10 minutes
  • Switch off the gas and cool the chutney
  • Add the finely chopped mint to the chutney
  • Store in a glass jar and refrigerate before serving

5. Mango Moong Dal

Dal with mango, seriously? Yes, it’s a thing and it tastes delicious! We know that moong dal is one of the most fav dal or lentils in the Indian cuisine, but if you’re tired of the traditional one, this is a recipe that is completely unique. This combination of sweet mango pulp and Indian spices is a must-try as it is both healthy and extremely flavorful!

Ingredients:

  • 1 cup cooked & mashed moong dal (split green gram)
  • 1 cup mango pulp
  • 1 tbsp cumin seeds
  • 2 tbsp ghee
  • ¼ tsp asafoetida (hing)
  • 2 tbsp chopped methi (fenugreek) leaves
  • 2 tsp sugar
  • 1 tsp lemon juice
  • 2 tsp coriander (dhaniya) seeds powder
  • ½ tsp chilli powder
  • ½ tsp turmeric (haldi) powder
  • 1 tsp grated ginger (adrak)
  • 1 tsp finely chopped green chillies
  • Salt to taste

Cooking Instructions:

  • Start by heating the ghee in a pan and add to it the cumin seeds
  • Once the seeds begin to crackle, add the asafoetida and cook it for 10 seconds
  • Next, put in the methi leaves and saute for 1 minute
  • Now add the cooked moong dal, the mango pulp, and remaining ingredients and bring them to a boil
  • Adjust the consistency of the dal properly by adding more water if needed and let it simmer for 2 minutes
  • Your dal is now prepared and you can serve it with rice or roti. (whichever you prefer)
